Chicken thighs are combined easily with tasty veggies, noodles and sauce to create a delicious meal idea. The savory sauce really pulls all the ingredients together for a delicious stir fry.

What is Chicken Lo Mein?

Chicken Lo Mein is a popular Chinese recipe. It consist of boneless skinless chicken thighs, but you can also use chicken breast or other proteins.

Colorful vegetables are cooked tender and mixed with the chicken. It is then topped with a delicious homemade sauce to combine the flavors.

It is so easy making it on the griddle because of the large cooking surface.

Ingredients needed for Chicken Lo Mein

Ingredients:

  • Vegetable Oil
  • Boneless Chicken Thighs (diced) 
  • Sliced Mushrooms 
  • Carrots peeled and shredded 
  • Red Bell Pepper sliced
  • Onion sliced
  • Lo Mein Noodles

For the Sauce: 

  • Minced Garlic
  • Ground Ginger
  • Low Sodium Soy Sauce 
  • Brown Sugar 
  • Oyster Sauce 
  • Sriracha Sauce 
  • Rice Vinegar 
  • Cornstarch

How to Make Chicken Lo Mein on the Blackstone Griddle: 

  • Step 1 – Cook Noodles – Cook the lo mein noodles based on the package instructions. Then rinse with cold water to keep them from continuing to cook.
  • Step 2 – Heat Griddle – Preheat the Blackstone grill over medium high heat.  Spread the vegetable oil onto the grill.  
  • Step 3 – Cook Chicken – Add the chicken to the grill. Then add the vegetables and mushrooms onto the grill next to the chicken.  Cook the chicken and vegetables for 4-6 minutes (flipping every minute) until the beef is browned and the vegetables are tender.

  • Step 4 – Combine Sauce – Combine all the sauce ingredients together in a small bowl.  Pour the sauce over the chicken and vegetables and toss to combine. 
  • Step 5 – Cook Noodles – Then toss in the cooked rice noodles.  Heat for 1-2 minutes to make sure that all the flavors are combined and heated through.

  • Step 6 – Serve and enjoy – Remove from the grill, serve warm and enjoy.

Blackstone Chicken Lo Mein Recipe Tips:

  • Prepare Noodles – Prepare noodles according to the package. Make sure to rinse after cooking so noodles stop cooking.
  • Prepare Griddle – Make sure to preheat griddle before adding ingredients. Make sure to oil the griddle so ingredients do not stick.
  • Cut Chicken – We recommend cutting the chicken in bite size pieces. Make sure to cut in about the same size to ensure that it cooks evenly. Allow the chicken to cook on both sides for best results.
  • Combining Ingredients – Combine the ingredients on the griddle to create delicious flavor.

Variation Ideas:

  • Chicken – We used chicken thighs  for this recipe, but you can use chicken breasts instead if you prefer.  
  • Vegetables – Feel free to add different types of veggies or any leftover vegetables that you have. We recommend bell peppers, broccoli, carrots, shiitake mushrooms or green beans.
  • Brown Sugar – If you prefer a sweet and salty sauce, add in a tablespoon of brown sugar to the sauce.
  • Add in other Seasoning – Mix in Hoisin Sauce or sesame oil for added flavor.
  • Noodles – If you are unable to find lo mein noodles at the grocery store in the refrigerated section. You can use different types of noodles. Use egg noodles, spaghetti noodles, chow mein noodles, or any type of noodles that you prefer.
  • Change the Meat – You can change the meat in this recipe. We have made it with shrimp and steak strips for delicious flavor.
  • Oil – We used vegetable oil to make this recipe but feel free to change the oil. You can use olive oil, avocado oil, and more.
  • Serving – This easy stir fry dish can be served with fried rice, soup and more. It makes and easy weeknight meal.

What is the Difference between Chow Mein and Lo Mein?

Both of these dishes use the same type of noodles and often it is the same recipe. The difference is in how the noodles are cooked.

Chow mein noodles are normally cooked to be crispy and lo mein noodles are served soft from being boiled. This recipe can easily make it in a large skillet, wok or cast iron skillet.
