This breakfast sandwich is one of my favorite Blackstone Recipes. The Fried Eggs and Bacon cooks easily on the large griddle top for a quick and easy breakfast.

The flavor is amazing and taste so much better than stopping at my local fast food restaurant. If you do not have a Blackstone, you can easily make in a skillet and toast your English Muffin in the toaster oven. This breakfast sandwich has become a staple breakfast recipe. It can be made with a variety of ingredients and it is healthier option than using Cast Iron Biscuits.

Ingredients

English Muffins Breakfast Sandwich - eggs, english muffins, bacon, pepper jack cheese, smoked paprika, garlic powder, salt, black pepper, onion powder, butter, avocado oil
  • Large English Muffins – Split the English Muffins in half to toast
  • Bacon – We have also used Turkey Bacon. You may want to learn How to Cook Bacon on the Grill.
  • Large Eggs – Make it Fried Eggs, Scrambled or Egg Patties
  • Slices of Pepper Jack Cheese – We love the extra hint of spice it gives.

How to Make English Muffin Breakfast Sandwich

  • Step 1 – In a small bowl, combine smoked paprika, garlic powder, onion powder, black pepper, and salt. Mix well.

  • Step 2 – Preheat the Blackstone griddle to medium heat and lightly grease the surface with avocado oil.
  • Step 3 – Place the bacon strips on the griddle and cook for 4-5 minutes on each side, or until crispy and browned to your liking. Remove the bacon from the griddle and set it aside on a paper towel-lined plate to drain excess grease.

  • Step 4 – Spread a thin layer of butter on the cut sides of the English muffins. Place them, buttered side down, on the grill. Toast until they are golden and crispy, about 1-2 minutes. Remove and set aside.

  • Step 5 – Crack the eggs onto the griddle. Sprinkle them with the prepared seasoning mix. Cook to your desired doneness, flipping if you prefer over-easy or over-medium.

  • Step 7 – Once the eggs are cooked to your liking, carefully place one egg on top of each cheese-topped English muffin half.
  • Step 8 – Break the cooked bacon strips in half and place two halves on top of each egg.

  • Cooking Eggs – Depending on personal preference, you can cook the eggs sunny side up, over-easy, or over-medium. For a fully set yolk, consider covering the eggs with a basting cover on the griddle, which would help cook the top without the need for flipping.
  • Prepare Griddle – Prepare griddle by preheating and adding oil. This helps to cook the ingredients with the best texture.
