Scallops can be prepared in many different ways, such as bacon wrapped scallops, but cooking on the griddle is our favorite. When they are cooked, they have a crispy texture and a tender center.

What are Scallops?

Scallops are a flavorful shellfish that live in salt water oceans. You will need to peel the shell to reveal the meat. But most sold in the stores are already ready to cook.

How to Select The Best Scallops

There are a few things to look for when choosing the best scallops to cook. These options are best whether you are cooking in a pan, grilling, or on your Blackstone.

Buying scallops is easy with these simple tips.

  • Look for scallops that have not been treated with chemicals.
  • Try to get scallops that are about the same size. This helps for cooking them evenly.
  • Choose Scallops that do not have a strong fishy smell. You want them to smell clean.

  • Change Seasoning – Feel free to change the seasoning when cooking the scallops. Toss the scallops with garlic powder, paprika, ginger, or any fresh herbs. Other options include parsley, thyme, and oregano.
  • Change the Flavor – Squeeze fresh lemon on the scallops while cooking.
  • Hibachi Scallops – Feel free to add a hibachi flavor to your scallops. You can easily cook with onion, capers, and drizzle with honey.

How to Cook Scallops on the Blackstone Griddle: 

  • Step 1 – Heat Griddle – Preheat a Blackstone Grill over high heat (approximately 400 degrees Fahrenheit). 
  • Step 2 – Prepare Scallops – Pat as much water as possible out of the wet scallops with paper towels.  Then season both sides of the scallops with pinch of salt and pepper.

  • Step 3 – Melt Butter – Melt the butter on the cooking surface and use a spatula to spread it around the grill. 
  • Step 4 – Cook Scallops – Place the scallops on the grill in a single layer.  Let the scallops cook without moving or flipping them for 1-2 minutes per side to get a good sear on them.

  • Step 5 – Flip and Cook – Flip and cook the other side of the scallops for 1-2 minutes as well. Cook until they are golden brown or perfectly seared scallops.

  • Step 6 – Serve – Serve immediately while warm and enjoy. When serving garnish with fresh parsley and lemon wedges.

Blackstone Scallops Recipe Tips

  • Prepare Blackstone – Make sure to preheat the griddle and add oil to prevent the scallops from sticking.
  • Cooking Scallops – You want to seared scallops while cooking on the griddle. Avoid moving the scallops around when you place on the griddle. This will create a crispy texture.
