Ingredients: 

Bacon Wrapped Scallops ingredients - sea scallops, bacon, butter, salt, pepper, garlic powder, lemon, parsley
  • Large Sea Scallops 
  • Bacon (cut in half) 
  • Butter (melted) 
  • Salt 
  • Black Pepper 
  • Garlic Powder 
  • Lemon (sliced into wedges)
  • Fresh Parsley (chopped for serving)

Step by Step Instructions: 

  • Step 1 – Soak wooden skewers for at least 15 minutes to 30 minutes to prevent them from burning on the grill. 
  • Step 2 – Place the scallops, melted butter, salt, pepper and garlic powder in a bowl and gently toss to coat the scallops in the butter and seasoning mixture.

  • Step 3 – Cook the bacon slices in a large skillet over medium heat for 3-4 minutes per side.  You don’t want the bacon to be crispy, you just want it slightly cooked.

  • Step 4 – Preheat your grill over medium high heat (approximately 425 degrees Fahrenheit).  
  • Step 5 – Wrap each of the scallops with a strip of bacon and place them on a wooden skewer.  Place 3 scallops onto each of the skewers so you should have 4 total skewers.

  • Step 6 – Brush the grill grates with oil so that the scallops do not stick while cooking. 
  • Step 7 – Then place the skewers on the grill and cook the scallops for 3-4 minutes per side. Cook until the scallops are cooked through and the bacon sides is crispy.

  • Step 8 – Remove from the grill.  Squeeze the lemon wedges on top and top with the fresh parsley.  Then the scallops are ready to serve and enjoy! 

Recipe Tips: 

  • Bacon – Do not use thick cut bacon as this will require more cook time.  
  • Wrapping Scallops – If the scallops are very large you may need a whole slice of bacon to wrap the scallops.  Adjust the number of slices of bacon as needed.  
  • Soak Skewers – To prevent the scallops from burning, make sure to soak them in water before threading the scallops.
  • Dry Scallops – We recommend drying the scallops with a paper towel before adding seasoning.
  • Cook Bacon – Make sure to cook the bacon slightly before wrapping around scallops. This ensures that the bacon is crispy and the scallops are not overcooked.
