Variations Ideas
- Chocolate – We used chocolate chips in this recipe, but you can also use dark chocolate chips or Hershey’s Chocolate Bar. We have even spread chocolate hazelnut spread for added flavor.
- Marshmallow – Substitute marshmallows for marshmallow fluff.
- Tortilla – Feel free to use different types of tortillas. We made this recipe with large tortillas but you can also use medium flour tortillas.
Step by Step Instructions
- Step 1 – Preheat the Blackstone griddle to Medium heat.

Step 2 – Lightly butter one side of each tortilla. On the non-buttered side of one tortilla, evenly distribute the mini marshmallows, chocolate chips, and crushed graham crackers, leaving a small border around
the edge to prevent spillage when melting.

Step 3 – Place the second tortilla on top, buttered side facing out. Carefully place the assembled quesadilla on the preheated Blackstone griddle.
- Step 4 – Cook for 2-3 minutes on one side, or until the bottom tortilla is golden brown and crisp. Use a spatula to check the color.
- Step 5 – Carefully flip the quesadilla and cook for another 2-3 minutes on the other side. Cook until the chocolate and marshmallows are melted and the second tortilla is golden brown.
- Step 6 – Once cooked, transfer the quesadilla to a cutting board. Allow it to cool for 1 minute as the filling will be very hot.
- Step 7 – Cut the quesadilla into wedges using a pizza cutter or a sharp knife.
- Step 8 – If desired, dust with powdered sugar or a cinnamon-sugar mixture.
Recipe Tips
- Heat Griddle – If the griddle is too hot, the tortillas may burn before the fillings have melted. On the flip side, if it’s too cool, the fillings may not melt properly, and the tortillas won’t achieve the desired crispiness.
- Cooking Quesadilla – Cooking time will vary depending on your griddle. You will need to carefully flip to cook both sides.
