How to Make Smoked Pork Chops

  • Step 1 – Heat Smoker – Preheat a smoker with a water pan to 225 degrees F. This meal takes about 20 minutes to prepare.   
  • Step 2 – Combine Ingredients – Mix the rub ingredients together in a small bowl.

  • Step 3 – Dry Pork Chops – Pat the pork chops dry with a paper towel to remove any excess moisture from the pork chops. 
  • Step 4 – Rub Seasoning on Pork Chops – Then rub the olive oil and rub mixture onto both sides of the pork chops.

  • Step 5 – Place pork chops in smoker – Then place the pork chops directly on the grill grates in the smoker.

  • Step 6 – Cook Pork Chops – Cook the pork for 60-90 minutes depending on the thickness of the pork chops.

  • Step 7 – Continue cooking – Cook until the pork reaches an internal temperature of 145 degrees F.

  • Step 8 – Serve and enjoy – Remove the pork from the smoker.  Let it sit for 5 minutes and then it’s ready to serve and enjoy!   

Expert Tips

  • Pork Chops – We like to smoke thick pork loin chops. If you choose to use a thinner pork chop, you may need to reduce your cooking time. Bone-in pork chops work best for this recipe. We do not recommend boneless pork chops.
  • Seasoning – Feel free to change the seasoning. We like making homemade seasoning rub so we can control the ingredients. But you can use a store bought option if you prefer.
  • Sear Pork Chops – For added flavor, you can sear the pork chops before adding to the smoker. Even if you skip this step your pork chops will still come out so flavorful.
  • Oil – We used olive oil to rub on the pork chops, but you can also use vegetable oil. You may need to brush the grill with oil, to prevent the pork chops from sticking.
  • Temperature – Heat the smoker low to medium high heat to cook the pork chops.
  • Marinate – Instead of using a dry rub on the pork chops, you can marinate them in many different marinades. They pork chops will come out flavorful. You can even baste with BBQ sauce once the pork chops are done cooking.

How long to Smoke a Pork Chop

Depending on how thick your pork chop is, it will take about 60 minutes to smoke it. We also recommending using an instant-read meat thermometer to make sure that the pork is cooked.

You want the pork to be cooked to a safe temperature before removing it from the smoker.

With the pork chops, you can cut the pork chops off the bone and place in a microwave safe container with rice and a vegetables.

Bone-in are flavorful pork chops. But they need need to be cooked the right length of time. Pork chops can be a little tricky to grill so that is why we always use a meat thermometer. Using a instant-read thermometer ensures that we don’t under cook or over cook the smoke chops. Plus to ensure that it is safe to eat.

What Wood Chips is Best for Smoking Pork Chops

Pork chops are best to smoke with hickory or maple smoke. Make sure to add chips to the smoker every 15 minutes if your grill smoker does not have an automatic feature.  You can also use fruit wood such as cherry wood.
