Step 1 – Mix together the pico de gallo ingredients. Cover and refrigerate until ready to use.

Step 2 – Wrap each of the hot dogs with the Strip of bacon. Making sure not to overlap the bacon so that it cooks evenly. Secure both ends of the bacon to the hot dog with toothpicks.

Step 3 – Preheat the grill over medium heat (approximately 400 degrees F). Rub the grill grates with olive oil or spray with a non-stick cooking spray so that the hot dogs do not stick to the grill.

Step 4 – Place the bacon wrapped hot dogs on the grill and cook with the grill lid closed for 8-12 minutes (turning them every 2-3 minutes) until the bacon is browned and crispy.

Step 5 – While the hot dogs are cooking, heat the beans in a small saucepan either on the grill or on the stovetop. Drain the beans and keep them warm until ready to serve.

Step 6 – Put the rolls on the grill over indirect heat, cover and heat for 1-2 minutes until the rolls are warmed.

Step 7 – Then it’s time to assemble the hot dogs. Spoon the beans into the bottom of the rolls. Top with the grilled hot dogs and the pico de gallo mixture.

Step 8 – Serve with the mayonnaise and mustard drizzled on top. Enjoy!
Recipe Tips
- Mayo Consistency – If the mayonnaise is too thick to drizzle over the top of the hot dogs, you can thin it out with milk and place in a squeeze bottle to drizzle over the hot dogs.
- Pico de Gallo – For the best flavor, we recommend making the Pico de Gallo ahead of time and store in the fridge.
- Prepare Grill – Before placing the hot dogs on the grill, make sure to preheat and oil the grill grates. This will cook the bacon-wrapped hot dogs with the best texture and prevents them from sticking to the grill gates.
- Stovetop Cooking – Feel free to also cook the hot dogs in a large skillet over medium heat instead of grilling them.
