Why We Love This Recipe
The chicken is seasoned with taco fajita seasoning and then placed between two tortillas so the melted cheese all blend together. This is great recipe to use leftover chicken and add in some vegetables.
Top your quesadillas with sour cream, guacamole and salsa for a complete meal. This recipe is perfect to feed a crowd. The Blackstone allows you to cook the quesadilla easily because of the large flat surface.

How to Cook Chicken Fajita Quesadillas on Blackstone Griddle
Step 1 – Preheat the Blackstone Grill over medium high heat. Spread the vegetable oil onto the grill.
Step 2 – Place the chicken onto the grill in an even layer. Season the boneless skinless chicken breasts with the taco seasoning. Continue sauté the chicken for 3-4 minutes per side until it’s browned slightly.
Step 3 – Then add peppers and onions and sauté them with the chicken for 5-7 minutes until the chicken is cooked through and the vegetables are tender.
Step 4 – Then top the chicken and vegetables with salsa and toss the chicken and vegetables with the salsa to thoroughly coat the mixture with the salsa. Sauté for a few minutes to combine the flavors and make sure that the chicken is cooked through (internal temperature of 165 degrees F).
Step 5 – Place the tortillas on the grill. Top each tortillas a small amount of each cheese, then layer then ½ cup of shredded chicken and vegetables on top and then add more cheese. Carefully fold each the tortillas in half making a half moon shape.
Step 7 – Cook until one side of the tortilla is golden brown (1-2 minutes). Flip and then cook until the other side is golden brown as well (1-2 minutes). Remove quesadillas, slice and they are ready to serve.
Expert Tips
- Oil for the Griddle – I used vegetable oil in this recipe. But any oil with a high smoke point will work great. Avocado oil, coconut oil or canola oil would work great in this recipe.
- Cheese – You can easily use your favorite type of cheeses in this quesadilla recipe. Use what you have. We like to use cheddar and pepper jack.
- Vegetable – Red bell pepper works great in this recipe but any type will work.
- Leftovers – These are best served fresh but you can refrigerate the leftovers in an airtight container for up to 5 days.

- Seasoning – You can add in some garlic powder or chili powder for extra flavoring.

We recommend heating the griddle to about 400 degrees. We like to cook our chicken on high heat as this prevents the chicken from sticking to the flat top.

- Then add in the red bell pepper and onions and sauté them with the chicken for 5-7 minutes until the chicken is cooked through and the vegetables are tender.
- Then top the chicken and vegetables with salsa and toss the chicken and vegetables with the salsa to thoroughly coat the mixture with the salsa. Sauté for a few minutes to combine the flavors and make sure that the chicken is cooked through (internal temperature of 165 degrees F).
- Push the chicken and vegetables to one side of the grill. Reduce the Blackstone temperature to medium.
