Blackstone Chicken Fajita Quesadillas Recipe:

If you are looking for a simple lunch or dinner idea, make chicken fajita quesadillas. These quesadillas can be made on your Blackstone or a large skillet.

The chicken is seasoned with taco fajita seasoning. The chicken is then placed between two tortillas so the melted cheese all blend together. This is great recipe to use leftover chicken and add in some vegetables.

Top your quesadillas with sour cream, guacamole and salsa for a complete meal. This recipe is perfect to feed a crowd. The Blackstone allows you to cook the quesadilla easily because of the large flat surface.

Can you use a Griddle for Quesadillas?

Yes, you can use a griddle for quesadillas. We recommend making quesadillas on the griddle. The tortilla gets crispy and golden brown and you can make your chicken on the same griddle.

Making a quesadilla is a quick lunch or dinner idea. It doesn’t take long to heat up the griddle and I can have lunch ready in about 15 minutes or less.

Fajita Chicken Quesadillas is one of our favorite Mexican dishes to make.

Ingredients needed - chicken breast, vegetable oil, taco seasoning, red bell pepper, yellow onion, salsa, cheese, monterey jack cheese, tortillas

Ingredients:

  • Chicken Breast, diced into 1 inch pieces
  • Vegetable Oil
  • Taco Seasoning (Or try Homemade Fajita Seasoning)
  • Red Bell Pepper, Diced
  • Yellow Onion, Diced
  • Salsa
  • Cheddar Cheese, shredded
  • Monterey Jack Cheese, shredded
  • Flour Tortillas, burrito size – Or corn tortilla

How to Cook Chicken Fajita Quesadillas on Blackstone Griddle:

  • Preheat the Blackstone Grill over medium high heat. Spread the vegetable oil onto the grill.
  • Place the chicken onto the grill in an even layer. Season the chicken with the taco seasoning. Continue sauté the chicken for 3-4 minutes per side until it’s browned slightly.
  • Then add peppers and onions and sauté them with the chicken for 5-7 minutes until the chicken is cooked through and the vegetables are tender.
  • Then top the chicken and vegetables with salsa and toss the chicken and vegetables with the salsa to thoroughly coat the mixture with the salsa. Sauté for a few minutes to combine the flavors and make sure that the chicken is cooked through (internal temperature of 165 degrees F).
  • Push the chicken and vegetables to one side of the grill. Reduce the Blackstone temperature to medium.
  • Place the tortillas on the grill. Top each tortillas a small amount of each cheese, then layer then ½ cup of shredded chicken and vegetables on top and then add more cheese. Carefully fold each the tortillas in half making a half moon shape.
  • Cook until one side of the tortilla is golden brown (1-2 minutes). Flip and then cook until the other side is golden brown as well (1-2 minutes). Watch them closely as they do brown quickly.
  • Remove the quesadillas onto a cutting board. Slice them and they they are ready to serve and enjoy!

Chicken Fajita Quesadilla Tips:

  • Oil for the Griddle – I used vegetable oil in this recipe. But any oil with a high smoke point will work great. Avocado oil, coconut oil or canola oil would work great in this recipe.
  • Cheese – You can easily use your favorite type of cheeses in this quesadilla recipe. Use what you have. We like to use cheddar and pepper jack.
  • Vegetable – Red bell pepper works great in this recipe but any type will work.
  • Leftovers – These are best served fresh but you can refrigerate the leftovers in an airtight container for up to 5 days.

  • Seasoning – You can add in some garlic powder or chili powder for extra flavoring.

What temperature should a Griddle be for Quesadillas?

We recommend heating the griddle to about 400 degrees. We like to cook our chicken on high heat as this prevents the chicken from sticking to the flat top.

What type of Cheese is best for Quesadillas?

There are many different types of cheeses that you can use when making quesadillas. We usually use what we have on hand. Hand shred the cheese on the thinnest holes so that it melts evenly.

You can use cheddar cheese, Colby Monterrey jack cheese, or any type of Mexican Blend cheese.
