Make sloppy joes from scratch with simple ingredients and cook it on the griddle. Then layer it on a tortilla with cheese and grill it on the griddle for a crispy texture and cheesy center.

Variations Ideas

  • Change the meat – We used ground beef in this recipe, but you can easily use ground turkey. Mix ground beef and ground turkey together for another option.
  • Sloppy Joe Mixture – We love the sloppy joe mixture from scratch, but you can still use the can stuff.
  • Change the Seasoning – For extra spice, add in a teaspoon of red pepper flakes for added flavor. Make sure to season with salt and pepper.
  • Cheese – Feel free to use different types of cheese that you make the quesadillas with.
  • Tortilla – We used flour tortilla in this recipe. But there are many different types of tortillas that you can use and that fits in with your diet.
  • Vegetables – Feel free to add in vegetables such as bell peppers for added flavor.

How to Make Sloppy Joe Quesadillas on Blackstone Griddle

  • Step 1 – Preheat the Blackstone Grill over medium high heat (approximately 400 degrees F).

Step 2 – Brown the ground beef with the diced onion on the Blackstone grill over medium high heat until no longer pink and browned.

Step 3 – Stir in the minced garlic and sauté for 1 minute until the garlic is aromatic.

Step 4 – In a small bowl, stir together the ketchup, brown sugar and mustard.

Step 5 – Heat over medium high heat for 2-3 minutes.  Push the ground beef to a cooler side of the Blackstone grill.

  • Step 6 – Place the tortillas on the Blackstone grill.  Add the ground beef mixture evenly to half the tortilla and top each one with ¼ cup of each of the shredded cheeses.   
  • Step 7 – Fold the tortilla in half.  Cook until the bottom of the quesadilla is golden brown (2-3 minutes).  
  • Step 8 – Flip and cook until the opposite side is also golden brown (2-3 more minutes) and the cheese is melted.
  • Step 9 – Remove from the Blackstone Grill.  Cut into wedges and serve quesadilla into 4 pieces.  Serve warm and enjoy.

Recipe Tips

  • Cook Quesadilla – When cooking the quesadilla, cook on the griddle over medium heat. This will give the tortilla a crispy texture and melt the cheese.
  • Oil the Griddle – Make sure to oil the griddle to prevent the quesadilla from sticking and with a crispy texture.
  • Leftover Ground Beef – This would be the perfect recipe to use up leftover ground beef. Just mix with the sloppy joe mixture for a quick lunch on the weekends.
  • Cooking Quesadilla – It doesn’t take long for the tortilla to get crispy. Make sure you stay close by so you can flip the tortilla.

  • 1 pound Ground Beef
  • ¼ Onion diced
  • 2 teaspoons Minced Garlic
  • ½ cup Ketchup
  • 2 Tablespoons Brown Sugar
  • 2 Tablespoons Yellow Mustard
  • 4 Burrito Size Flour Tortillas 10 inch tortillas
  • 1 cup Cheddar Cheese shredded
  • 1 cup Monterey Jack Cheese shredded

Instructions
