Variation Ideas
- Use Different Types of Mushrooms – We usually use the white button mushrooms, but you can use portobello mushrooms, cremini mushrooms, or shiitake mushrooms.
- Add Vegetables – Add onions or bell peppers to this mixture.
- Add Sauce – Toss in steak sauce to the mushrooms for amazing flavor.
- Use different Seasoning – In this recipe, we used simple seasoning but you also add in some garlic powder. White wine is also a great addition to season the vegetables with. Worcestershire sauce or beef broth is also a good option.
- Large Skillet – You can cook the steak and mushrooms in a cast iron skillet if you don’t have a Blackstone.
- Steak Dinner – Any type of steak such as ribeye steak is a great option for a steak dinner.
How to Cook Steak and Mushrooms on Blackstone Griddle
- Step 1 – Prepare Blackstone Griddle – Preheat the Blackstone griddle over high heat (approximately 500 degrees F). You want the griddle to be hot to get a good sear on the steaks.
- Step 2 – Season Steaks – Make sure that the steaks are dry and are at room temperature. You can dry with paper towels. Combine the seasoning with the steak together in a small bowl. Then season the steaks with the seasoning mixture (approximately 1 tsp per steak).
- Step 3 – Oil Griddle – Spread the olive oil out onto the Blackstone grill.
- Step 4 – Add Steaks Griddle – Once the oil is hot, place the steaks on the Blackstone grill on top of the oil.
- Step 5 – Add Mushrooms to Griddle – Then place the sliced mushrooms on the grill next to the steak. Season the mushrooms with the salt and pepper.
- Step 6 – Cook Steak and Mushrooms – Let the steak and mushrooms cook for 2-3 minutes and do not move them to get a good sear on the steaks and the mushrooms.
- Step 7 – Flip Steaks – Then use tongs to gently lift and flip the steak. If the steaks are still sticking to the grill, this means that they need more time and they are not ready to flip yet.
Continue Cooking Steaks and Mushrooms
- Step 8 – Continue Cooking Steaks – Flip the steaks onto a separate section of the grill. Then cook the steaks for 2-3 more minutes to sear the opposite side of the steaks.
- Step 9 – Sauteed Mushrooms – Then gently toss the mushrooms and cook for 2-3 more minutes until the mushrooms are browned on both sides.
- Step 10 – Add butter to Mushrooms – Top the mushrooms with 2 Tbsp of the butter and then continue to toss the mushrooms on the grill until they are the tenderness that you prefer (2-3 more minutes).
- Step 11 – Remove Mushrooms – Remove the mushrooms from the grill and reduce heat to medium high heat.
- Step 12 – Cook steaks to your desired temperature – Cook the steak until they are done to your preference. Use an instant read meat thermometer to check the steak temperature. The recipe notes has the internal temperature for each steak preference.
- Step 13 – Add Butter to Steaks – Then top each grilled steak with approximately ½ Tbsp of butter and let the butter melt into the steak.
- Step 14 – Serve and Enjoy – Let the steak rest for 5 minutes and then it’s ready to serve warm and then enjoy!
How to Sauté Mushrooms on the Griddle
Prepare the mushrooms by slicing them in thinly slices. Once the grill is oiled and heated, add the mushrooms on the griddle. While the mushrooms are cooking, stir them around on the griddle for about 2-3 minutes.
Continue cooking the mushrooms sauce until they are tender and golden brown.
Internal Temperature for Steaks
The best way to test for doneness is by inserting an instant read thermometer into the thickest part of the steak. Do this through the side, not the top of the steak.
- Rare – 120F, cool to warm red center
- Medium Rare – 130F, Warm red center
- Cooked Medium – 140F, Hot pink center
- Medium Well – 150F, Mostly brown center
- Well Done – 160F, full brown in color

The best way to make sure your cook your steak tender is to preheat the griddle and let your steak come to room temperature before cooking. Add your favorite seasoning and place on a hot grill. This will allow the steak to get a nice sear to create a juicy center.

- 4 Sirloin Steaks
- 2 tsp Salt
- 1 tsp Pepper
