Flank steak is one of my favorite steaks to cook. It cooks tender and juicy with simple seasoning. Blackstone Recipes is one of my favorite ways to cook steak and the flank steak cooks in less than 10 minutes.
Whether you are making Blackstone Steak Fajitas or Blackstone Beef and Broccoli, I always use flank steak because of the way it tastes. This steak is best served in thin strips in tacos or with a side of vegetables.

What is Flank Steak?
Flank Steak is a delicious lean cut of meat that is tender and flavorful and is best served in fajitas, stir-fries, and on salads. It has a rich flavor with a chewy texture.
When cooking flank steak it is best to cook the steak to about medium to avoid it being to tough to eat. We love to grill it but it can be prepared in a cast-iron skillet, cooked on a flat top grill, or boil in the oven.
Feel free to use different types of dry rubs or marinades to make this steak your own.

- Flank Steak
- Salt
- Black Pepper

Variations Ideas:
- Cuts of Beef – We love using these simple seasoning on the flank steak. But you can also use this recipe on a skirt steak, sirloin steak, and more.
- Seasoning – Feel free to change the seasoning to what you prefer. We recommend chili powder, cumin, paprika, and garlic salt. You can even use a Steak Marinade that is made with only 3 ingredients – soy sauce, oil, and balsamic vinegar.
- Oil – You can also use different types of cooking oil to cook the steak on. We have used olive oil, vegetable oil, and avocado oil.
Step by Step Instructions:
- Step 1 – Preheat the Blackstone griddle over high heat (approximately 450 degrees F). You want the griddle to be hot to get a good sear on the steaks.
- Step 2 – Make sure that the flank steak is dry and are at room temperature.
- Step 3 – Combine the garlic powder, Italian seasoning, salt and pepper together in a small bowl.
- Step 4 – Then season the steaks with the seasoning mixture on both sides of the steak.
- Step 5 – Spread the oil out onto the Blackstone grill.
- Step 6 – Place the flank steak on the Blackstone grill. Cover and cook for approximately 5 minutes to get a good sear on the steak.
- Step 7 – Then use tongs to gently lift and flip the steak.
- Step 8 – Cover and cook the other side for approximately 4-5 minutes on each side.
- Step 9 – Then reduce the temperature on the Blackstone grill to medium heat. Cook the steak until it is done to your preference. Use an instant read meat thermometer to check the steak temperature. The recipe notes at the bottom has the internal temperature for each steak preference.
- Step 10 – Remove the steak from the grill. Loosely cover the steak with foil and let the steak rest for 10 minutes.
- Step 11 – Then the perfectly cooked steak is ready to slice, serve and enjoy.
Recipe Tips:
- Rest Steak – After taking the steak off the griddle, make sure to allow it to rest before slicing. We recommend resting steak for about 10 minutes.
- Slicing Steak – It is important to slice the flank steak the right way to ensure that the steak is served tender. Place the flank steak on a cutting board and with a sharp knife, cut the steak against the grains and muscle fibers.
- Blackstone Griddle – Before placing the steak on the griddle, make sure to preheat to medium-high heat. This ensures that the steak gets a nice sear.
- Room Temperature – Before cooking steaks on the griddle, make sure the steaks need to be at room temperature.
- Dry Steaks – Before placing the steaks on the griddle, make sure you steaks are dry. We like to dry with a paper towel.
How to Know When Steak is Cooked:
The best way to test for doneness is by inserting an instant read thermometer into the thickest part of the steak.
Do this through the side, not the top of the steak to check for Steak Doneness:
- Rare – 120F, cool to warm red center
- Medium Rare – 130F, Warm red center
- Medium – 140F, Hot pink center
- Medium Well – 150F, Mostly brown center
- Well Done – 160F, full brown in color
Serving Suggestions:
Our favorite way to serve this Flank Steak as Fajitas because of the flavor and the many ways we can top the fajita. I love to squeeze fresh lime juice or lemon juice after placing in tortillas.
This steak is lean and great topped with salsa, cooked bell peppers, onions and fresh cilantro.
