Recipe Variations

  • Cheese – You can use any type of cheese in this recipe. Pepper Jack Cheese, provolone, cream cheese or cheddar cheese are great options.
  • Buffalo Sauce and Ranch – For added flavor, you can mix in ranch dressing in the sauce. Add in garlic powder or cayenne pepper for delicious flavor.
  • Chicken – This is a great recipe to use leftover chicken and even rotisserie chicken.
  • Bread – We used white bread, but another delicious option is Texas Toast or sourdough bread.

How to Make Buffalo Chicken Grilled Cheese on Blackstone Griddle

Step 1 – Place 2 tablespoons of the butter in a small microwave safe bowl and microwave in 20 second intervals until melted.  Stir in the buffalo sauce and whisk until combined with the butter.

Step 2 – Then stir in the cooked shredded chicken and the blue cheese crumbles

Step 3 – Spread the remaining butter onto one side of each of the slices of sandwich bread. Top each with ½ cup of the shredded cheese, then top with the buffalo chicken mixture and the remaining shredded cheese.

Step 4 – Heat a Blackstone Grill over medium heat (approximately 400 degrees Fahrenheit). Place the sandwiches on the grill.  Cook over medium high heat for approximately 4-5 minutes until golden brown.  

  • Step 5 – Flip the sandwiches and cook the other side of the sandwiches for 4-5 more minutes until golden brown. 
  • Step 6 – Remove from heat and cut in half, serve and enjoy.

  • 4 Slices White Sandwich Bread
  • 2 cups Cooked Shredded Chicken
  • 1/2 cup Buffalo Sauce
  • 4 Tablespoons Butter divided and softened
  • 1/4 cup Blue Cheese Crumbles
  • 2 cups Shredded Monterey Jack Cheese

Instructions

  • Place 2 tablespoons of the butter in a small microwave safe bowl and microwave in 20 second intervals until melted.
  • Stir in the buffalo sauce and whisk until combined with the butter.
  • Then stir in the cooked chicken and the blue cheese crumbles
  • Spread the remaining butter onto one side of each of the slices of bread.
  • Place 2 pieces of the bread, butter side down, on a work surface.  Top each with ½ cup of the shredded cheese, then top with the buffalo chicken mixture and the remaining shredded cheese.
  • Top with the remaining pieces of bread (butter side facing out).
  • Heat a Blackstone Grill over medium high heat (approximately 400 degrees Fahrenheit). Place the sandwiches on the grill.  Cook over medium high heat for approximately 4-5 minutes until golden brown.
  • Flip the sandwiches and cook the other side of the sandwiches for 4-5 more minutes until golden brown.
  • Remove the sandwiches from the grill, cut in half, serve and enjoy!
